Carrot Cake from Better Homes and Gardens



This cake I've been making for years and years, and have slightly modified it over time, and its still just as yummy. I'll still give credit to BHG though :)

2 cups all-purpose flour
2 cups sugar (can be reduced to 1.3 cups)
1 teaspoon baking power
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamom (I like cinnamon...add moooorreee!!)
3 cups finely shredded carrot
1 cup cooking oil
4 eggs

Stir together dry ingredients. Add oil and eggs, beat till well combined. Add shredded carrot. Pour into greased pan. Bake in 325C pre-heat oven for 40 to 60 minutes depends on the pan size. Do cake test.

Cream Cheese Frosting

1 3-ounce package cream cheese
1/4 cup butter or margarine
1 teaspoon vanilla
2 cups sifted powdered sugar

Beat everything except sugar until fluffy. Gradually add powered suar, beat till smooth.
